white chocolate ice cream w/ raspberry rose jam

 

We start by making a custard and melting white chocolate into it for a sweeter, slightly chocolatey flavor. The chocolate makes the ice cream slightly denser and richer due to the cocoa butter in the white chocolate. Next a jam is made by cooking down raspberries, sugar citric acid (to preserve the color and tart flavor of the raspberries) and rose water until it becomes tight and jammy. The jam is then swirled into the white chocolate ice cream for a tart, sweet and slightly floral addition to the rich sweet white chocolate ice cream.
